Flour free chocolate cookies

Ingredients

350g (1.5 cups) dark chocolate chips, melted
3 large egg whites
250g (2 cups) icing sugar, divided
60g (0.5 cups) cocoa powder
1 tbsp cornflour
¼ tsp salt

In this video recipe my Mother and I show you how to make some absolutely fantastic flour free chocolate cookies that will rock your socks – perfect for a gluten free diet and just as good, in fact gorgeous!

Start off by getting your oven to 400°F/Gas 6/200C

Grab an electric mix and whisk the egg whites until soft peaks form, gradually adding in half of the sugar, it should get to a creamy texture with the sugar fully dissolved!

In a separate bowl mix the other half of sugar, cocoa, cornflour, and salt until merged. Again, beat the dry ingredients into the sugar egg mixture in batches it should be very glossy and shiny. Stir in lukewarm chocolate, the dough will start to stiffen very quickly almost like a burn chocolate texture, don’t worry this is fine and exactly what we want so that it can be moulded!

Roll the dough into balls about a tablespoon in size and place on prepared sheet. Repeat with remaining dough, spacing 2 inches apart.

Bake until puffed and tops crack, about 8-10 minutes. Cool on a wire rack then dust with extra icing sugar to finish!
