Doughnut mug recipe

Ingredients

40g butter

1 large egg yolk

2tbsp sugar plus extra to serve

2tbsp milk

4tbsp flour

1/2 tsp baking powder

1tsp ground cinnamon

1tsp strawberry jam plus extra to serve

 

Ok so we’re right in the middle of the house move at the moment and this is officially the first video in our new home, although it’s a little untidy for a while until our new one arrives it’s still usable for sure! So this recipe is for a doughnut in a mug and was sent in via the website here from Bob from Rhode Island, he thought this little speedy sugar kick in a mug could be just the ticket for a pick me up and it was surprisingly good!

The one tip I will give you is that it will all depend upon the power microwave that you intend to use – mine is a 800w one, so if your microwave is more powerful, it may need less cooking time.

First up put the butter into the mug and melt, this should take about 30 seconds or less in the microwave, keep your eye on it as you don’t want exploding butter in there! Add in the egg yolk, milk and sugar and mix through until well dissolved. Now add in the dry ingredients – the flour, baking powder and cinnamon, mix through until smooth, add a little extra milk if you need to smooth it but not too much. The mixture should be half filling them mug.

Dollop in a teaspoon of jam, then spoon over some batter to hide the jam so it is encased in the batter. Microwave for (remember this will vary massively on your microwave!) 90 seconds opening it 3 or 4 times whilst it cooks to stop it rising too quickly and spilling over, you’ll know it is ready once you tap it and it sounds hollow and the doughnut is firm.

Finish with a sugar and an extra splodge of jam on top.
