Creamy Garlic Mushrooms

Ingredients

500g mushrooms, sliced (mixed mushrooms are best!)

Nice crustly loaf of bread, thickly cut into slices

1 heaped tbsp butter

Handful thyme leaves

4 cloves of garlic, finely chop 3, reserve 1

Large handful fresh parsley chopped

2tbsp crème fraiche

Small drop red wine / balsamic vinegar

Salt and pepper to season

One of my absolute favourite things to make for breakfast, although sadly I don’t get to make it any where near as much as I would like as it does make your kitchen smell of garlic! So if you have people around the house that don’t like the smell, wait for the perfect moment to make this, it’s pretty quick and extremely delicious for breakfast, lunch or whenever! It’s also vegetarian, the mushrooms themselves give it a sort of meaty texture.

On the subject of the mushrooms if you can get a few different types of mushrooms that can really add to the flavour and texture of the recipe once done. But your standard mushrooms, washed of course work just as well!

So, all you need to do is get a large frying pan and place in the butter over a medium low flame, let the butter melt and when small bubbles start appearing, add in the garlic. Stir and cook through in the butter for around one minute. After that, add in the thyme leaves and stir again for a minute. It’s then time to add in the sliced mushrooms, stir and continue to cook these for a good 5 minutes or until they have wilted down and softened. It should be really nice and fragrant.

It’s now a good time to toast your bread if you wish to toast it, you can serve it un-toasted and it’s just as good! Add in the vinegar, parsley, creme fraiche (or cream if feeling naughty!) with them mushrooms and stir to combine, it should all come together into a sort of light grey delicious mass of garlicky mushroom herby goodness! Remove from the heat.

If you want to add some more flavour to the recipe rub a garlic clove into the toasted bread, then pile high the mushrooms on top of the bread and season if you wish. Eat, then open the windows! Absolutely delicious quick fix that you will keep coming back to I promise! Enjoy
