Garlic Overdrive: 50-Clove Garlic Bread!

5 garlic bulbs / approx 50 cloves

60ml olive oil

salt and pepper

200g butter, softened

40g fresh parsley, chopped

1 tbsp oregano, chopped

1 sourdough boule / large bread round

250g mozzarella cheese

50g parmesan cheese to serve

Howdy! Today, we’re diving headfirst into the garlic kingdom with an epic twist on Tasty’s legendary 40-Clove Garlic Bread recipe. Hold on tight, because we’re cranking it up to 50 cloves – yes, you heard me right – for the most mind-blowing garlic experience you’ve ever had …. well, 50 instead of 40 garlic cloves mainly.


1. Prep That Garlic
Slice the garlic bulbs in half and place on foil, drizzle on the olive oil and season well with salt and pepper. Wrap the foil to form a parcel and bake for 40 minutes or so at 180fan/200C or equivalent.

2. Slice the bread and mozzarella:

Whilst the garlic is baking, use a serrated knife to slice one inch strips along the bread being careful not to go all the way through the loaf, cut to almost the bottom. Turn it 90 degrees and then slice the same way creating big pockets for our mozzarella. The mozzarella gets slices into strips the height of the bread, stuff them in where you can and once done stick in the oven with the garlic for ten mins to melt it down (this is optional but it helps level it!) Remove the melted cheese loaf from the oven for the time being.

3. Garlic Butter:
Once the garlic has cooled (say 20 minutes) keep the oven on but squeeze the garlic from the bulbs into a large bowl, mash them with a fork and then add in the butter, parsley, oregano and season with some more salt and pepper, mix until you have a lovely garlic butter!

4. Spread the butter:
Add the butter all over the bread loaf, using a spatula to evenly coat it throughout! Now return to the oven for another 20 minutes to lightly brown.

5. Garnish & Serve:
Once it’s baked freshly grate on the parmesan and serve sliced in massive wedges! Absolutely incredible!

Bonus Tip:
For the ultimate garlic experience, serve this bread alongside your favorite pasta or use it to make the most insane garlic grilled cheese sandwich. You won’t be disappointed!
