Right so first things first this is a really fun twist on hot dogs – carrot hot dogs!….Replacing the dogs (the meaty part) with a carrot! This was sent in by a follower on Facebook and I had to try it, many thanks to fellow YouTubers Dad and Dan Nerd Cubed for helping out! I travelled a 400 mile round trip just to make these hot dogs! But they were actually very nice indeedy! As mentioned in the video, this is not my recipe, the original can be found here http://www.delish.com/cooking/recipe-ideas/recipes/a56149/carrot-hot-dogs-recipe/
The steps to making these carrot hot dogs are very simple, in fact you just really need one bowl for the marinade and that’s it! The only thing to be careful of is ensuring that you use just enough liquid smoke, don’t go too crazy as it can be very overpowering in some dishes, so literally use the 1/2 tsp specified below in the ingredients!
So go ahead and pour all the ingredients listed below (other than the carrots, ketchup and mustard) into a mixing bowl and give a darn good mix together. Ensure that the carrots are peeled and sliced so they are the same size and will roughly fit your hot dog buns later – they don’t shrink that much.
Pour the marinade over the carrots in a shallow oven proof dish, cover with tin foil, then place in the fridge to marinate for 30 minutes. We are not sure if this step was essential, but we did it anyway!
Pre-heat the oven to 425f/220c/Gas 7 and once the marinade time is up, place in the oven still covered in the foil for 30 minutes, remove from the oven, take off the foil and spin the carrots over then bake for another 30 minutes with the foil off. The recipe we followed said 20 minutes, but it really needed 30, just make sure the carrots are softened!
Carefully remove from the oven and lift into hot dog buns, serving with ketchup and mustard – amazing!
