Cajun Chicken Penne

Ingredients

8 mini chicken fillets
2tbsp cajun seasoning
4tbsp single cream
2tbsp white wine
1 chicken stock cube
3 spring onions, sliced
8 cherry tomatoes, sliced
1/2 orange pepper, chopped fine
fresh penne pasta
salt & pepper
fresh chopped parsley to serve

In this video I show you how to make an extremely simple griddled cajun chicken penne pasta dish, which you can chuck together in under 20 minutes. Super good, super tasty, super easy…. there is nothing to hate about this recipe at all plus you can tweak it to your liking.

The dish is actually something I chucked together in a bit of a hurry quite recently and put a picture up on instagram of the dish.

I had so many requests to show how I made it that I thought i’d shoot the video in a more relaxed style in my kitchen as I go along to show how easy this dish really is.

Start off by getting your chicken ready, I used mini chicken fillets as I find they cook quicker. Give them a good rub all over with the cajun seasoning and then give your hands a really good wash. This was a dry rub, but you could add oil to the chicken first if you prefer.

Griddle the chicken in a hot griddle pan (again no oil) both sides until cooked through and charred, i’d say about 4 minutes either side does it. Meanwhile get your pasta on to boil, i’m using fresh pasta which is done in half the time as dried so if you are using dry pasta put this on before the chicken.

In a small frying pan over a low flame add in the spring onions, pepper and tomatoes push around the pan for a few minutes to warm through. Crumble in a stock cube, then add the cream and the white wine (or whatever you are using), give a good seasoning, add in some fresh chopped parsley and simmer for a few minutes to remove the alcoholic content from it.

Drain off your pasta and pour the creamy sauce into the pan stirring through gently with a spatula to fully coat it. I went for penne as some of the sauce gets stuck in the tubes.

Serve on a plate, start with a big pile of pasta and sauce. Lay down the chicken strips, give an extra seasoning and finish with some extra parsley.
