Burrito Bowl

Ingredients

Rice

½ red onion

1 garlic clove, chopped

200g long grain rice

Tsp ground cumin

100g sweetcorn

230ml chicken stock

3tbsp tomato sauce

 

Black bean salsa

250g black beans

3 chopped tomatoes

Handful chopped coriander

½ red onion

 

Pork and marinade

1 pork steak

Tsp olive oil

Zest and juice ½ a lime

Tsp ground cumin

Tsp oregano

Pinch salt

 

To serve

Sliced pepper in matchsticks, blister them in pan if you like

Fresh coriander

Grated cheese

Sour cream

Avocado slices

Spring onion slices

How to make a burrito bowl. This recipe is a spin on a typical burrito having it naked in a bowl serving it with homemade salsa, corn rice, pork and beans.

So the first thing I want to say about this recipe (and it is unlike me), please do not be put off by the amount of ingredients – many of them are to finish and the rest are in the pan in a flash, you are creating something special here folks that is well worth it! Start by getting a large frying pan, adding in a little drop of oil and frying the red onion half and garlic for 3 minutes to release the flavours and initially soften, next tip in the rice and cumin and stir through for a few more minutes to toast the rice. Now add in the sweetcorn, stock and tomato sauce and bring to the a simmer. Once a simmer is reached, put a lid on the pan and leave to absorb for 15 minutes, stir it a couple of times during cooking.

Meanwhile in a separate frying pan, again get a small drop of oil and fry the onion / garlic combo to soften. Push in the tomatoes, black beans and the coriander, season with pepper and cook over a medium flame for 5 minutes until slightly thickened, it should be looking gorgeous and colourful.

Next mix all the marinade ingredients together and brush over the pork steak. Cook on a hot griddle pan for 8 – 10 minutes or until well charred and cooked through, leave to rest on a board for a few minutes before slicing. Also blister your peppers if you wish in the hot pan.

Now build your bowl, rice first, then the beans and pork on top then chuck in all the other ingredients around it as per the video above – sour cream, cheese, spring onions, avocado, peppers and extra coriander. This will blow your mind – good luck and let us know how you get on!
