BLT Sandwich Food Feud

Ingredients

2 slices good quality bread

4tbsp breadcrumbs seasoned with salt and pepper

2 slices tomato

few drops balsamic vinegar

grating of grana padano cheese

handful watercress

1tbsp green pesto (lemon infused if you can get it!)

few slices of romaine lettuce

2 rashers bacon

1tbsp honey

1tbsp yellow mustard

So we won’t go into full details of who requested what ingredient to make our epic BLT sandwich… we give everyone credit for that at the end of the video so let’s break down what is in this epic thing!

We’ve got pan fried bread, with pesto, grana padano cheese, romaine lettuce, breadcrumbed salt and pepper tomato slices, bacon, honey mustard mayo and cress! It truly is to die for and was like a gourmet sandwich!

First up slice your tomato and pat dry to remove any moisture, dip the slices in beaten egg then breadcrumbs seasoned with salt and pepper, dunk again in the egg and then more breadcrumbs, do this to all the tomato slices.
Warm the oil in a frying pan and place in the tomatoes, gently frying either side until golden brown, before resting on some kitchen towel.
Meanwhile mix together the honey and the mustard in a small bowl and leave to one side.

Using the residual heat in the pan cook up the bacon to your desired preference and again, rest to one side. Finally plonk a knob of butter in the pan and fry the bread either side until golden brown! You are now ready to serve 🙂

Place down the bread slices and drizzle with a little balsamic vinegar. Spread with pesto and grate on some grana padano cheese, lay down the bacon rashers, drizzle over the honey mustard dressing, place on the tomatoes, a good snip of watercress, before the lid goes on! This is truly a phenomenal sandwich, I so hope you try it.
