Ingredients

Noodle Omelette

2 large eggs

1tbsp sesame oil

100g chicken flavour dried noodles (or flavour of your choice)

1tbsp light soy sauce

1tsp vinegar

1tsp chilli flakes

1tsp fresh grind pepper

1 spring onion, chopped finely

 

Blueberry Cookies

150g plain flour

½ tsp baking powder

Pinch of salt

75g butter, softened

75g caster sugar

Zest of ½ lemon

75g frozen blueberries

100g white chocolate chips

 

Babybel Bites

Approx 10 babybels, unwrapped

150g plain flour, seasoned with pepper

2 eggs, beaten in a bowl

200g breadcrumbs

60g parmesan cheese, finely grated

1tsp garlic powder

½ tsp salt

½ tsp cayenne powder

1tsp dried parsley

Food on TikTok can be very strange to pretty darn useful and in todays case… really tasty! In this episode of Barry tries, we test out 3 TikTok recipes that have been extremely popular on the platform including blueberry cookies, a noodle omelette and some air fryer babybel bites. They sound strange, but wow, totally blew my mind! Hope you give them a go!

Noodle Omelette

First up cook the dried noodles to packet instructions, flavouring them as you would normally with the provided sachet if applicable. The instructions when cooking should tell you to cook until the fluid is absorbed, but drain them off if you think they are still a bit wet in a sieve.

Mix all the other ingredients together in a bowl with a whisk. When the noodles have cooled slightly (so that they don’t cook the egg in the bowl!) pour the noodles into the egg mixture, stir and then pour into a frying pan cooking over a medium heat until set and browned, if you are feeling confident, flip the omelette in the pan, or alternatively pass it onto a plate and invert it into the pan to cook the other side. With both sides browned, tip onto a serving plate and slice up. Tastes great after being chilled in the fridge too the next day.

Blueberry Cookies

First up get the blueberries, place them into a microwave proof bowl and cook them for approx. 90 seconds, stirring in between every 20 seconds or so. We just want to soften them and let a little juice come out.

In a large mixing bowl whisk the sugar and cream together with an electric whisk until creamy, then add in the blueberries and whizz away until combined. Add in the remaining ingredients, but reserve a handful of the chocolate chips and again whizz away until left with a neon purple cookie batter.

Place in the fridge for 30 minutes to firm up the batter slightly. Then dollop in big tablespoon amounts (or smaller if you wish, they do expand as they bake) onto a large lined baking tray. Dot the tops of the blobs of cookie mix with a few of the remaining chocolate chips.

Bake for approx. 10 minutes in the oven at 160fan/180c or equivalent. Once the edges start to brown that is best to know that they are done, so bake til then if a few extra minutes are needed. Let them cool on the tray before transferring to a wire rack to cool fully although best served still slightly warmed.

Babybel Bites

This is fairly easy and yes, if you want you could deep fry them, they’d probably hold their shape better and cook quicker, but be more unhealthy.

Create your dunking station – have the seasoned flour in one dish, the beaten egg in another, then the seasoned crumbs in a final one. To make the seasoned crumb combine the parmesan, breadcrumbs, cayenne pepper, salt, parsley and garlic powder in a bowl and stir well until consistent in colour.

After making this I feel like double dunking the babybel is best. So place the babybel in the flour, then the egg bowl then into the seasoning, lifting any more on top to coat. This is fine, it’s coated. But you can double coat it for a better layer and crunch by adding it back into the egg, then a second coat of seasoning. Repeat with the remaining babybel.

Lightly spray an air fryer pre-heated to 400f with oil and place the babybel in cooking for a few minutes until browned and starting to go gooey! Let them cool for a moment before eating!
