I’ve always been a fan of video games, when I was younger I used to play them a lot, not so much now, but I used to love the classics like Super Mario and Sonic etc. In this video i’m showing you how to make a little edible twist on Super Mario, super mario cupcakes with the green and red mushrooms from the video game. They are quite easy to make so you really should give them a go. I got the cupcake tray from thinkgeek.com but you could probably make muffins and shape them with a knife once cooled. I hope you give these Super mario themed cupcakes a go, you may double in size literally if you eat too many 😉
First up make the cupcake batter by creaming together the sugar and butter until smooth. Next add in the beaten egg and vanilla extract again mixing through. Tip in the self raising flour and mix well until thickened up, you want the batter to be relatively maneuverable so add a drop of milk if you wish to make it a little looser.
Tip the ingredients into the super mario 1up cupcake tray lubricating with a little spray oil first of all. Bake in the oven for around 12 minutes or until a skewer inserted comes out clean and no batter clinging on, the oven temperature is gas 4 or equivalent see oven temperature conversion chart.
Meanwhile mix the icing sugar and butter together to form a buttercream, again add a little milk if you wish but I did not on this occasion as we want to make the buttercream quite grippy. Separate the buttercream in two bowls and use both the red and green food colour gels to dye to the shade of your liking. Smother in buttercream the lids of the mushrooms and use a little excess to hold it to the stem, then stick the icing dots on top – amazing super mario cupcakes with a mushroom feel, give these a go!
