These are not just any rolo cookies! This video recipe shows you how to make stuffed rolo cookies that have a gorgeous gooey middle that will rock your World, so easy to bake, you have nothing to lose! This is another video for cookie Month, other recipes this Month include homemade jammie dodgers, oatmeal and raisin cookies and three ingredient nutella cookies, I have to say though that these ones blow them all out of the water, in fact I may have to say these are the best cookies I have ever made, I loved them!!
Start off by creaming together the room temperature butter with both the sugars in a mixing bowl.
Once combined add in the eggs and the vanilla extract, mix through until fully merged with the creamed butter sugar mixture.
Next add in the dry ingredients – the cocoa powder, bicarb of soda and the plain flour, do this in 2 batches and fold through until incorporated. You want to make sure it is fully combined and that the dough can be shaped / not too wet. If this is the case, either chill the dough or add more flour to the mixture as you need to shape it with your hands. I would actually suggest not using all the flour at once and leave a little at the end until you are happy with the consistency.
Using clean cold hands scoop up a tablespoon of cookie dough then push a rolo into the middle of it, sprinkle with salt like I did for a salted caramel edge but this is optional, use your hands to roll the dough around the rolo and keep rolling until fully covered. Sit on a lined baking tray well spread apart and bake for 8 minutes at 170c or alternative (see baking oven temperature conversion chart).
Once baked allow to cool on the tray for a few minutes before placing onto a wire rack. When you break into them the gooey stuffed rolo filling will spill out! So good!
