Steak caramelised onion sandwich

Ingredients

Ciabatta rolls (or equivalent)

2 minute steaks

2 tbsp olive oil

1 tbsp worcester sauce (or use balscamic vinegar)

1 large onion, sliced

3 bacon rashed, sliced into small pieces

1/2 tbsp brown sugar

1tbsp balsamic vinegar

2 slices cheddar cheese

mayonaisse, tomato and rocket salad to serve

This steak caramelised onion sandwich has a gorgeous gooey melted cheese and the addition of caramelised bacon in with the onions, this will be enough for 2 people.

First up put the minute steaks in a dish and combine with the olive oil and worcester sauce, flip over to ensure the steaks are completely covered. Leave to one side for the moment, minute steaks take a very short time to cook which is why they are great for this recipe.

Next up get a frying pan and add some olive oil, get it warm then fry up the onions and bacon for 10 mins until the onions just start to char. Pour in the balsamic vinegar and the brown sugar and stir through to stain it, keep cooking and stirring for 5 minutes until nice and charred, reserve in a bowl to one side.

In the same pan cook the steaks for 90 seconds either side, on the final side (of course this is optional) add a slice of cheese and cook away with a lid on just to melt it through. Remove from the pan and rest on a board for the moment.

Again using the same pan, toast the bottom and top halves of the bread rolls cut side down for a minute or so in the pan before building the sandwich!

Start with a base layer, a squirt of mayo, steak, caramelised onions & bacon, tomato slices and rocket salad, finish with the lid on top – phenomenally good! Try it 🙂
