Road Trip Food

by Barry Lewis

Ingredients

Pizza wheels
pack ready rolled puff pastry
3 tbsp tomato puree
Large handful grated cheddar cheese
3 slices ham, torn up
1 egg, beaten
Dried basil to finish

Chocolate coated strawberries
225g / 8 ounces chocolate chips
1 tbsp unsalted butter
450g / 1 pound strawberries

This is a slightly different video, it contains 2 recipes! Yes, 2! Pizza wheels and chocolate coated strawberries!

For the strawberries make sure you pat dry them first of all. This will prevent any of the melted chocolate running off of them when dunking.
Melt the chocolate in a bowl with the knob of butter over a pan of simmering water, after around ten minutes and a few stirs you should have nice melted chocolate.
I poured my mix into a smaller bowl to give greater dunking depth for the strawberries and also cool it down.
Dunk a strawberry at a time holding them by the stem into the chocolate to coat well all over. Let any excess drip off by holding for a few seconds before laying down on a tray lined with baking parchment.
Place them in a fridge to set the chocolate for fifteen minutes, but it will need no longer or the chocolate will go that funny pale colour!
Keep them stored in an air tight container ready for your road trip or store in the freezer!

For the pizza wheels use a sheet of ready rolled pastry and spread some tomato puree all over one side giving a light coating, we find a spoon works best.
Give a good sprinkling of grated cheddar cheese on top, then add any other toppings of your choice, roll the pastry up from the shorter width end to create a mini swiss roll look and whack in the fridge for 5 minutes to firm up.
Slice into disc shapes, place on a lined baking dish and brush with beaten egg and also give a sprinkle of basil.
Bake in the oven gas mark 5 / 375f / 190 c for around 15 mins until golden brown!
Enjoy both of these road trip food, they are both freezable, quick and will go down a treat with kids of all ages (including adults!!).
