Quick Christmas Pudding

Ingredients

60g plain flour

2 eggs

1/2 tsp ground cloves

1/2tsp cinnamon

1/2tsp nutmeg

300g raisins

50g mixed peel

1tbsp golden syrup

2tbsp treacle

100g brown sugar

100g suet

1 slice bread, whizzed up into breadcrumbs

2tbsp brandy

70ml guinness

This Christmas pudding recipe is made as a bit of an emergency one, but tastes incredible and really works a charm! Be sure to light it at the end if you wish too!

The steps are very simple indeed, in fact all you need to do is mix all of the ingredients together in a large bowl until well combined, then tip into a smaller mixing bowl that has been greased with butter (or lined with clingfilm). The bowl it goes into does not have to be that big, it will not rise too much so a 1 litre one should do it with a little room spare at the top.

Cover in clingfilm, pierce with a fork and microwave for ten minutes (800watt microwave, if your one is more powerful it may take less time) until slightly firmed, but springy to touch – careful it will be hot….it will be a little moist but leave to stand then turn out onto a plate. Serve with cream after lighting with brandy if you wish!
