Christmas Taco

This christmas taco recipe is as much of a quirky item as it is a potential leftover buster…. lets cut to the chase here, this thing is amazing tasting! Like so, so good…. here is how I made it but really you could pretty much get away with any twist you like on it!

First up grab whatever leftovers you can find from Christmas day – or any roast dinner to be honest! I was lucky enough to have some turkey, sprouts, stuffing and gravy leftover from a mini christmas dinner I had made previously.

I sliced some baby potatoes into even sized square slices, coated them in a little vegetable oil, pepper and a handful of freshly chopped rosemary. Placing them on a roasting tray with some pigs in blankets (sausages wrapped in bacon) and baking for 25 minutes at 180c or equivalent until golden brown and cooked through respectively! Delicious!

The only other thing I had to do was cook some sprouts up in boiling water for ten minutes, but if you had some of these leftover you could re-heat in the microwave and the mush with a fork. That’s what I did once mine were cooked through!

Warm the hard taco shells in the oven for the last 5 minutes of the baking time for the pigs in blankets and the potatoes then serve together.
I started with a pile of mashed sprouts on the bottom layer, a pig in blanket, stuffing, turkey, cranberry sauce, potatoes then drenching in gravy…. it was phenomenal! Having a taco with gravy in it was next level stuff my friends! You seriously need to give this a try!

Like I say it all depends what leftovers you have, but rather than bubble and squeak, maybe try this one out!
