Baking cookies …. in a car?!

Ingredients

125g butter

110g light brown sugar

110g caster sugar

1 egg

1tsp vanilla extract

220g self raising flour

Pinch salt

100g chocolate chips / chunks

Lets head to the beach and attempt to bake cookies in my car using the power of the sun! Apparently in 1 hour in direct sun cookies will turn out delicious, see how I get on, whilst also taking you on a mini tour of my home town with Boston.

If you would like the recipe for the cookies (which are amazing) here’s what to do….

Preheat the oven to 200°C, (fan 180°C, gas mark 4) and line 2 baking trays with baking parchment. In a large bowl cream together the butter and sugars until pale and fluffy then add the egg and vanilla extract and mix together well. Add the salt and the flour in with the wet ingredients, mix until almost fully combined before adding the chocolate chips. Keep stirring until a soft dough forms.

Roll up small pieces of dough (table tennis ball size) onto the baking trays, it will spread out during baking in the car?! (or oven!!!)…. bake for 8-10 minutes, allow to cool on a wire rack fully before eating!
