Possibly one of the most delicious TikTok recipe versions of the Barry tries playlist to date – these were all super good in their own way! First up we’ve got baked feta pasta, which actually tastes way better the next day, then baked oats, a sort of porridge inspired muffin (I gave mine a chocolate orange twist) and last up air fryer corn ribs, which were just outstanding! I really hope you give them a try 🙂
Baked Oats (like a porridge muffin)
Nice and simple this one, whizz up the porridge oats in a food processor/blender (or use oat flour and skip this step) then add it to a bowl with all the other ingredients. Mix well until a consistent mixture is formed, pour into a ramekin, bake for 10-15 minutes @350f/160fan/180c until just risen and starting to lightly brown on top. Insert a skewer into it to make sure it cooked through (if it comes out a bit wet, bake again for a few more minutes).
Air fryer corn ribs
Carefully cut the corn into quarters. Watch the video for the way to do this safely.
In a bowl mix together all the ingredients to form a paste and brush it onto the corn. Place in an air fryer for 10minutes at 400f, take out and sprinkle with coriander and the cheese – amazing! Play around with the seasonings that you like, you can really give them some kick with some chilli powder for example. No need to add extra oil to the air fryer as you brushed oil onto the corn already.
Baked feta pasta
Get an oven pre-heated to 375f/180fan/200c. In a large baking dish add the tomatoes, onion, garlic, thyme, ½ the lemon zest (plus a small squeeze of juice, about a tsp) and nearly all the olive oil, season with the salt, pepper and chilli flakes, then mix together well to coat the oil all over and randomise the ingredients. Place the feta on top and pour on the rest of the oil and season some more.
Bake for approx. 45 minutes, until the feta is browned on top. Whilst it is cooking, cook your pasta to package instructions, leaving 150ml of the water it cooked in. Once the feta dish is baked, remove from the oven and stir in the pasta and the water. Give it a good stir to break up the feta, then top with the remaining lemon zest and any other seasonings you wish. This tastes better cold in my opinion the next day, it was super refreshing after chilled, but warm was nice too!
