Viral TikTok Recipes TESTED: Grinder Salad Sub, Crunchy Croissants & Upside Down Puff Pastry
Today I’m back at it again with some incredible TikTok recipes that may actually blow your taste buds out of your mouth. TikTok is a real gem for some insane recipes, I hope you enjoy watching me try these ones out!
First up we’ve got a fruity puff pastry tart that’s actually self-saucing! Now, this one might sound a bit fancy, but don’t worry my friends, because it’s actually surprisingly easy to make (as long as you don’t forget the steps like I did!). Here’s the twist – we’ll be flipping it upside down after baking, revealing the gorgeous syrupy sauce and fruit topping!
Next on the list is the crunchy croissant ice cream sandwich. Yep, you heard me right – ice cream sandwiched between buttery, flaky croissants that have been squashed, drenched in sugary sweet goodness, then fried to crispy perfection. The final step adds a couple of scoops of your favourite ice cream between two crunchy croissants, that have been perfectly toasted to give it that irresistible crunch. It’s sweet, it’s indulgent, and it’s pure heaven in every bite. Prepare to be blown away by this TikTok dessert sensation that will leave you wanting more.
And finally, we have the Grinder salad sandwich. This is based around the iconic Grinder salad but with added cheese, ham, salami and more! It’s slathered with a tangy dressing that takes the flavour profile to a whole new level. Trust me, you won’t be able to resist this one!

The viral upside-down puff pastry hack
This one is nice and simple get your fruit, drain the juice from a tin and if using the fruit juice from the tin if you like (perhaps a tbsp or so) mix in with the honey. Line a baking tray and arrange the fruit on the baking tray, try not to use mushy fruits like raspberries etc, use firmer ones but mix it up to your liking! Drizzle the honey mixture on top of the fruit to coat, then cut out a piece of puff pastry and drape if over your fruit, cut it to size if necessary.
Give the pastry an egg wash and sprinkle with sugar. Bake in the oven at 180fan/200c or equivalent for 15-20 minutes or until golden brown and puffed up. Allow to cool on a wire rack and serve with custard or your preferred topping of choice.
Crunchy Croissant ice cream sandwiches
Alright for this one grab a croissant and roll it out as flat as you can on a chopping board, turn it over and do the other side, this is quite fun! Grab a frying pan add the oil evenly around the bottom of the pan, just to cover the bottom of the pan evenly. Warm the pan up and add in the croissants, placing another pan on top to weigh it down – mine was quite a light pan so I weighed it down with another pan of water, to prevent them rising while frying.
Cook them until browned, approx. 3-4 mins. Remove from the heat and place browned side down, brush the uncooked sides with honey and sugar, then return to the pan and weigh down again cooking for another few minutes honey side down for a few minutes, allow to cool fully and repeat if using more croissants.
Wedge your favourite ice cream between 2 croissants, eat immediately…. Or alternatively wrap in cling film and freeze, but remember freeze it too long and the croissant will be like eating a brick. Good luck!
Grinder SALAD SUB
The first thing I want to mention here is this is quite flexible indeed – use what you like, the cheese, the meats etc, make it the way you want, you are the one that is gonna have to deal with it all!
Lets make the salad first, in a large bowl add the vinegar, mayo, garlic, salt and pepper, oregano, chilli flakes, peppers and onion. Give it all a good mix together, tweak to taste, cover with cling film and place in the fridge to chill. This salad alone was incredible.
Get your oven pre-heated to 160fan/180c/350f and lets work on this sandwich. Halve the loaf of bread lengthways, hollow out the bread in the middle pinching with your fingers and thumbs, don’t go all the way down, just form a crater, place the cheese on each of the cut sides – say 5 on each evenly to cover the bottom. Bake in the oven on a lined baking tray cheese side up and bake for around 5 minutes or until melted. Remove from the oven but keep the oven on.
On one half of the bread layer the ham all over, then top with the genoa salami. On the other half add the sopprasetta salami and top that with the salami. Bake in the oven for another 5 minutes to warm it up and release some of the oils from the meats.
Now it gets crazy. Once the bread is out the oven sprinkle both sides with parmesan all over. On the bottom half top with tomato slices all over, drizzle on the olive oil, seasoning with salt and pepper, then pile on some salad (maybe not all of it!) then place the lid of the bread on top bringing it all together. Press down lightly and slice through, to serve, an unbelievable sight, let alone taste!
