It’s time to cook some more viral TikTok recipes in the latest Barry tries, this time it’s the turn of an epic Starbucks brown sugar clone, cheesecake bars and bagel wraps (which are incredible!)
Slutty cheesecake bars
First up line a square 8×8” tin with baking parchment, leave a bit of a flap to make lifting out of the pan easier. Ideally if you have a loose bottomed tin this is better to use if you can when it comes to taking it out. Pre-heat the oven to 325f/140fan/160c or equivalent.
Take the cookie dough and press it into the base of the pan to cover it evenly, you may need it to sit at room temperature for a little bit to help it press easier and soften, make sure it’s nice and level then sprinkle oreo crumbs all over the cookie layer.
Make the cheesecake filling by whisking together in a bowl the sugar, cream cheese, eggs, extract and salt, whisk for a few minutes until consistent and lump free – an electric whisk is best. Pour this over the crushed oreo cookies. Top with even more oreo cookies, then bake in the oven for 35 minutes, or until baked with a slight wobble in the middle.
Allow it to cool fully to room temperature, then place in the fridge for 2 hours to firm up. Pour warmed caramel sauce all over the top of the brownie bars then slice into bar shapes and eat away, you can store in an airtight container – highly recommend sharing these with as many people as you can as they are not the healhiest but very addictive!
Bagel wraps (makes 6 bites)
First up, if you need to make your own everything seasoning whizz all the ingredients for the seasoning up together in a food processor for 30 seconds, it’ll make enough for 3 or 4 wraps so you could make some more. Take a tortilla and spread the cream cheese all over lightly to just cover it, sprinkle on the everything seasoning, just to lightly coat the cream cheese. Roll it up tightly into a log, trim the end either end, then cut into rough 1 inch blocks – you’ll probably end up with about 6 of them. Now either eat as they are (nice!), or if you like you can melt the butter over a low flame in the pan until bubbling, add the bagel wraps and brown, flipping often on both sides.
Starbucks clone brown sugar shaken iced espresso
First up make the syrup, in a saucepan add the sugar, water, vanilla and cinnamon to a pan. Give a little stir together and put over a low heat, stirring often, let it simmer and keep your eye on it so it doesn’t burn. After 3 minutes or so of simmering it should have thickened, remove from the heat and add to a cocktail shaker or some sort of jar you can shake with a lid on – I used a food blender. Add the syrup with the coffee and 2 cubes of ice and shake together, do this whilst the syrup is still slightly warm to help the coffee merge with the syrup and the ice to melt. It should be quite foamy after shaking it up.
Get a serving glass and fill with ice cubes. Pour half of the syrup over it and then top with milk and a little extra cinnamon on top if you wish. The other half of syrup is to be used for a second serving or could be kept for another day until needed.
