Giant Ravioli Recipe – Oversized Pasta You’ll Actually Want to Make
Right, I’ll be honest — this whole thing started because I was fed up with going to restaurants, ordering ravioli, and getting three tiny bits lost in the middle of a massive plate. You pay through the nose and end up heading home still hungry. So I decided to flip it around and make just one ravioli… but absolutely massive.
This giant ravioli recipe was surprisingly fun to make. It’s fresh pasta from scratch, filled with a classic spinach and ricotta mix, and finished with a few classic toppings once done! It’s actually a really lovely dish – despite looking like a novelty.
Why Make Just One Giant Ravioli?
Partly for the fun, partly to make a point. If you’ve ever felt underwhelmed by restaurant portion sizes, this is the antidote. It’s basically the same idea as regular ravioli – just one huge one instead of a bunch of little ones. You could absolutely serve this up to impress guests, or just as a fun weekend cook-up.
The Pasta
I went full homemade on this one – proper pasta flour, eggs, kneaded by hand, rolled out with a machine (you could use a rolling pin at a push). The dough needs resting, rolling thin, and a fair bit of flour dusted about to stop it sticking, especially when sealing it shut.
The Filling
I kept it traditional with ricotta, wilted spinach, parmesan, a bit of nutmeg, salt and pepper. Then the yolk goes right in the middle so that when you cut into it after cooking, it oozes out. Like a pasta lava cake… if that’s a thing.
How It’s Cooked
You need to be gentle with this – a big pocket like that is easy to burst. I dropped it carefully into simmering water and gave it a few minutes, just enough to set the yolk and cook the pasta. Then topped it with butter, tomato sauce and a bit more parmesan. Job done.
Would I Make It Again?
Yes, actually. It might look like a gimmick, but it really worked. And it’s surprisingly satisfying being able to say you made a giant ravioli from scratch. It’s one of those “looks daft but tastes good” kind of recipes that’s well worth trying at least once.
