Easy Fish Pie

Ingredients

50g butter (1/4 cup)
50g plain flour (1/3 cup)
250 ml milk (1 cup)
1 heaped tsp horseradish sauce
500g mixed frozen fish (17 oz)
1 pepper, sliced
1/2 onion, sliced
6 cherry tomatoes, quartered
1 slice of bread
3tbsp grated cheese
large handful fresh parsley

A video recipe on how to make a super simple fish pie with a cheese breadcrumb topping. Perfect for students & those on a budget wanting to fill up on good food! This is my first video recipe for student month, the aim is for budget meals for the Month and to make them tasty and this fish pie hits the spot. Use refrigerated or frozen fish mix (so cheap!) or fillets if you prefer of a certain fish, and you can also make this ahead of time and store in the freezer!

Start by making the sauce, melt the butter in a saucepan and then tip in the flour, mix it through for a few seconds until it merges as a paste, then add the milk, continue to stir under a low flame until all the lumps go and you are left with a thick sauce. Season well with pepper and mix through the horseradish sauce. Keep to one side.

In a baking dish add the fish, then the vegetables of choice, mix them about in the dish and then pour the sauce you made on top. Bake in the oven for 15 minutes at 180c / Gas 4 / 350f.

Whilst it is baking whizz in a food processor the cheese, parsley and slice of bread to make lovely breadcrumbs, once out of the oven top the dish fully in the crumbs and return to the oven for a further 10 minutes until browned all over. Garnish the fish pie in leftover fresh parsley, super lovely!
