Ingredients

Hot Honey Chicken

Hot Honey sauce

250g honey

1tbsp chili flakes (or more to taste)

2tbsp apple cider vinegar

For the chicken

10 mini chicken fillets

200g cornflakes

100g panko style breadcrumbs

100g plain flour

2eggs, beaten

Vegetable oil for frying

2tsp paprika

1tsp mild chili powder

 

Juicy chicken

3 chicken thighs

3tbsp chipotle sauce

1 lime, juice only

1tbsp sazon goya or

Homemade sazon goya

1tbsp paprika

1tbsp cumin

1tbsp garlic powder

1tbsp turmeric

1tbsp coriander

1tbsp pepper

1tsp salt

1tsp oregano

 

Cheesy Chicken Alfredo Pasta Bake

3 chicken breasts, chopped into cubes

Salt & pepper, to season

4 cloves garlic, minced

600ml chicken stock

600ml double cream

200g penne pasta

220g parmesan cheese

220g mozzarella cheese, shredded

1 handful fresh parsley, chopped to serve

I’ve found a bunch of chicken recipes on TikTok that have gone superviral, folks seem to be obsessed with them and I want to find out why! They certainly sound all good – we’ve got juicy chicken, a cheesy chicken alfredo pasta bake and hot honey chicken, to try out. They all sound rather epic indeedy, let’s give them a go!

 

Hot Honey Chicken

Start by making the honey sauce first. Get a saucepan, add in the honey and chilli flakes, over a low heat bring it up to a steady simmer, take off the heat and you can now choose to sieve out the flakes, or keep them in for more intensity, stir in the vinegar. Leave to one side until serving.

For the chicken, whizz up the cornflakes in a food processor, and mix with the panko, paprika, chilli and some salt & pepper. Dunk the chicken pieces in the beaten eggs in one bowl, carefully lift out and roll in the plain flour in another bowl, return to the beaten egg bowl, then finally dunk in the panko mixture in a third bowl coating fully, place on a wire rack and repeat with the other pieces of chicken.

In a fryer or large pan warm you oil to approx. 170c or equivalent, fry the chicken in batches ideally for around 10 minutes to ensure it’s cooked through and golden brown all over. Check that the chicken is white by taking out a test piece & slicing through if you are unsure, place on kitchen towel. Repeat in batches with the chicken so not to lower the temperature of the oil too much, serve with the hot honey drizzled all over, with extra honey as a dunking pot!

 

Juicy chicken

If you don’t have the sazon goya powder, mix together all of the sazon goya ingredients in a bowl until well combined. Press this mixture into the chicken thighs all over, spread the chipotle sauce all over the thighs, add to a ziplock bag, squeeze in the juice of a lime (maybe add the zest too if you like), shake it up and massage it to coat all over, place in the fridge to marinate for at least an hour.

When ready to cook, remove the thighs from the marinade, pan fry the chicken in a little oil over a medium heat until charred all over, allow to rest for a few minutes before slicing and serving.

 

Cheesy Chicken Alfredo Pasta Bake

Start off by getting a large saucepan and frying the chicken breast cubes in some olive oil, season with salt and pepper as you cook them. Cook until just starting to go lightly brown in some areas, then top up with the stock, cream and pasta, bring this up to a boil, watch the pan so it does not spill over, stir often.

Keep it simmering for approx. 20 mins on a low heat to cook the pasta through, do this with a lid on the saucepan. Remove from the heat, add in 2/3 of the parmesan and stir through, the residual heat in the pan will melt it through. Get a 20x30cm (ish!) baking dish, pour in half the pasta mix, top this with half of the mozzarella all over, top up with the rest of the pasta, then add the remaining parmesan and the mozzarella. Season with more salt and pepper if you like.

Place under the grill for approx. 10 minutes or until the top is golden brown, allow to cool, top with parsley if you wish, then serve up. This is truly phenomenal!
