In this video recipe I show you how to make a cauliflower steak. This is an incredibly quick, healthy, vegetarian, delicious dinner idea for you to have a go at. You may have seen it on the barrylewis.net poll and some of you were not voting for it, so I decided to do it anyway (inserts evil laugh!).
I just love the concept of this and as cauliflower seems to be popular I really hope some of you try it and put your own spin on it!
We make our oil baste by mixing the olive oil with the juice of the lemon and lime, plus the chopped garlic clove. Whisk this together until combined. You can tweak this to your liking and add zest if you wish, this gives the dish a real zing. Leave this to one side.
Get the cauliflower and remove all of the leaves as best you can from the outside and the bottom, then trim the bottom with a sharp knife so that it stands straight to make cutting it easier.
Cut one inch strips through the cauliflower working from the middle, the core section helps hold it together a bit like an onion.
Brush the oil on the steaks, then top with paprika, salt and some zest. Cook in a griddle pan for 6 minutes until charred (whilst it is cooking top the reverse with the other ingredients). Flip over and repeat cooking for another 5 minutes.
Place the steaks in a baking tray and put foil on top, bake for 25 mins (gas 5 or equivalent see oven temperature conversions)to soften the insides. You can skip this step but the cauliflower will be crunchy.
Remove from the oven and finish with some more lemon / lime juice for more zing and some coriander for colour.
This cauliflower steak is smokey, zingy and very tasty indeed – you will love it!
